Peanut Butter Banana Sushi Rolls

Ingredients:

  • 2 large bananas
  • 2 tablespoons of peanut butter (or almond butter for a nut-free option)
  • 2 whole wheat tortillas or wraps
  • 1 tablespoon of honey (optional)
  • 2 tablespoons of granola
  • 1 tablespoon of mini chocolate chips
  • Cooking spray (optional)

Instructions:

  1. Prepare Ingredients:
    • Peel the bananas and lay them on a cutting board.
    • Spread peanut butter (or almond butter) evenly over each tortilla or wrap.
  2. Assemble the Sushi Rolls:
    • Place one banana on each tortilla, closer to one edge.
    • Drizzle honey over the bananas if desired.
    • Sprinkle granola and mini chocolate chips over the peanut butter-covered banana.
  3. Roll Up the Sushi:
    • Carefully roll the tortilla tightly around the banana, tucking in the sides as you go.
    • If needed, lightly press the edges of the tortilla to seal it shut.
  4. Slice the Sushi Rolls:
    • Using a sharp knife, slice each rolled tortilla into bite-sized pieces, creating sushi-like rolls.
  5. Serve and Enjoy:
    • Arrange the sushi rolls on a plate and serve them as a fun and nutritious snack or dessert.
    • Optionally, lightly spray the outside of the rolls with cooking spray and lightly toast them in a skillet for a warm, crispy texture.

Additional Tips:

  • You can get creative with additional toppings such as shredded coconut, chopped nuts, or dried fruit.
