Tis the season of the crockpot. The weather is getting cooler, and the days are getting shorter. At this time of year, my crockpot is my go-to for quick and easy comfort meals to warm us up. After-work chaos is even more hectic with a toddler. When we are all getting home for the day, the last thing I have the time or energy to do is cook a complicated meal – and clean the kitchen afterwards! Slow cooker recipes make the whole process so much simpler and save me so much time. There is not much that feels better after a long day then a hot, home-cooked meal.
Here are some of my favorite, easiest crock pot recipes that are perfect for setting and forgetting in your slow cooker:
Dr. Pepper Crockpot Pulled Pork Ingredients: - Any pork roast will be perfect, but I usually go with a pork butt or picnic roast. - Salt, pepper, garlic powder - 1 onion (optional) - 1 can Dr. Pepper - BBQ sauce Instructions: 1. Chop the onion and add it to the bottom of the crockpot 2. Coat the roast in the salt, pepper, and garlic powder and place it in the crockpot 3. Pour the Dr. Pepper over the top and cook on low for 7-8 hours 4. Use two forks to shred the pork, mix in bbq sauce to taste, then serve as desired. This recipe is delicious on a bun with pickles, on a salad, or in a pork taco!
Crockpot Chicken and Dumplings Ingredients: - 3 boneless chicken breasts - 1 onion (diced) - 2 cans cream of chicken - 3 cups chicken broth - Salt, pepper, garlic powder, poultry seasoning (1 tsp of each) - 1 roll of refrigerated biscuit dough (8 count) Instructions: 1. Add all of the ingredients to the crockpot except for the biscuit dough 2. Cook on low for 6 hours 3. Once chicken is cooked, use forks to shred it and stir 4. Cut the biscuits into pieces or strips (I use kitchen shears and do it right into the pot) 5. Stir again and then cook on high for 1 more hour or until the biscuits are cooked 6. Sprinkle with parsley to serve if desired
Crockpot Beef and Broccoli Ingredients: - 1 ½ lb of sirloin steak, sliced - 1 cup beef broth - ½ cup soy sauce - ½ cup brown sugar - 3 cloves of minced garlic - 2 tbsp corn starch - 2 cups of broccoli florets Instructions: 1. Add steak, broth, soy sauce, brown sugar, and garlic to your crockpot and cook on low for 3-4 hours or until beef is cooked. 2. Spoon a few tablespoons of the hot broth into a bowl and whisk in the cornstarch 3. Add cornstarch mixture back into the crockpot and stir in broccoli 4. Cook until broccoli is tender 5. Serve over rice with an optional garnish of sesame seeds and green onions
Crockpot Pizza Casserole Ingredients: - Box of pasta rigatoni, penne, or ziti - ½ lb ground sausage - 1 lb ground beef - 1 can of pizza sauce - 1 package of shredded mozzarella cheese - Favorite pizza toppings (optional) Instructions: 1. Cook pasta until al denote 2. Brown the meats, drain grease, and stir in the pizza sauce 3. Spray your crockpot with nonstick cooking spray and begin layering in your ingredients, alternating between noodles, meat mixture, and cheese 4. Add and modify your favorite pizza ingredients to taste. Some of our favorite things to add are a layer of black olives and mushrooms, or a layer of packaged pepperoni to the very top. 5. End with a layer of mozzarella, cover, and cook on low until hot and bubbly (2 to 3 hours)
Crockpot Potato Soup Ingredients: - 1 bag frozen hash-brown potatoes (cubed or shredded is fine) - 2 cans chicken broth - 1 can cream of chicken soup - chopped onion, celery, and carrots (½ cup each) - Salt and pepper to taste - 8 oz package cream cheese - Toppings: cheese, bacon, sour cream, green onions (optional) Instructions: 1. Combine potatoes, chicken broth, cream of chicken soup, veggies, and salt and pepper in crockpot 2. Cook on low for 5-6 hours 3. Stir in cream cheese and cook until melted and mixed in 4. Serve with toppings
