This recipe offers a delightful blend of flavors and textures, making it a satisfying and healthy option for a family dinner.

Ingredients:
- 4 large bell peppers (any color you prefer)
- 1 cup quinoa, rinsed
- 1 lb ground turkey
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes, drained
- 1 cup chicken or vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar, mozzarella, or your choice)
- Olive oil for cooking
Instructions:
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Prepare the Bell Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Rinse them under cold water and set aside.
- Cook the Quinoa: In a medium saucepan, combine the quinoa and chicken or vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and the liquid is absorbed. Remove from heat and set aside.
- Prepare the Filling: In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and garlic, and sauté until soft and translucent, about 3-4 minutes.
- Add the ground turkey to the skillet and cook until browned, breaking it apart with a spoon as it cooks.
- Stir in the diced tomatoes, dried oregano, dried basil, paprika, salt, and pepper. Let the mixture simmer for a few minutes to allow the flavors to meld together.
- Combine Quinoa and Turkey Mixture: Add the cooked quinoa to the skillet with the turkey mixture. Stir well to combine all the ingredients evenly.
- Stuff the Peppers: Place the hollowed-out bell peppers in a baking dish. Fill each pepper with the quinoa and turkey mixture until they are full.
- Bake: Sprinkle shredded cheese over the tops of the stuffed peppers. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the cheese is melted and bubbly.
- Serve: Carefully remove the stuffed peppers from the oven and let them cool for a few minutes before serving. Garnish with fresh herbs if desired.
