Savory Stuffed Bell Peppers with Quinoa & Turkey

This recipe offers a delightful blend of flavors and textures, making it a satisfying and healthy option for a family dinner.

  • 4 large bell peppers (any color you prefer)
  • 1 cup quinoa, rinsed
  • 1 lb ground turkey
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, drained
  • 1 cup chicken or vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • Olive oil for cooking


  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Bell Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Rinse them under cold water and set aside.
  3. Cook the Quinoa: In a medium saucepan, combine the quinoa and chicken or vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and the liquid is absorbed. Remove from heat and set aside.
  4. Prepare the Filling: In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and garlic, and sauté until soft and translucent, about 3-4 minutes.
  5. Add the ground turkey to the skillet and cook until browned, breaking it apart with a spoon as it cooks.
  6. Stir in the diced tomatoes, dried oregano, dried basil, paprika, salt, and pepper. Let the mixture simmer for a few minutes to allow the flavors to meld together.
  7. Combine Quinoa and Turkey Mixture: Add the cooked quinoa to the skillet with the turkey mixture. Stir well to combine all the ingredients evenly.
  8. Stuff the Peppers: Place the hollowed-out bell peppers in a baking dish. Fill each pepper with the quinoa and turkey mixture until they are full.
  9. Bake: Sprinkle shredded cheese over the tops of the stuffed peppers. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the cheese is melted and bubbly.
  10. Serve: Carefully remove the stuffed peppers from the oven and let them cool for a few minutes before serving. Garnish with fresh herbs if desired.
