Summer has now come, which means one thing: time for all the grilling! We love to grill a lot during the hot months, as it keeps the high temp of cooking outside with the rest of the heat. We do all of the basics: burgers, hot dogs, steaks, chicken.
But there is one staple that we can’t live without and do all summer long: Potato Packets!
These are super simple and very customizable by what your tastes are! So what are potato packets? Pretty much exactly what it sounds like: cut up potatoes cooked in a foil packet on the grill. All you need to get started is aluminum foil, spray oil, potatoes, and any toppings or seasonings you desire.
You can cut the potatoes however you like, but know that the cooking time will depend both on the temp of the grill and how big the potatoes are. I actually prefer to slice my potatoes with a mandolin. That makes quick work of it and allows the potato packets to cook fairly quickly!
Once I have my potatoes sliced up, I pat them down and get the excess starchy juice off of them. Then I pull out a sheet of aluminum foil (about 14-18 inches in length) and spray lightly with spray oil.
I lay down my first layer of potato slices. After that, I put down my toppings of choice and then layer again. Once I’m done, I either put a little butter (1-2 tablespoons) or a drizzle of olive oil.
Then I fold the foil around the potatoes the long way (think like a hot dog) and then roll up the ends to create a nice little packet for the potatoes to cook in.
Then toss them on the grill and cook!
I usually start them on direct heat and then move them to an upper rack after about 10 minutes to ensure they don’t burn on the bottom. Typically they are on the grill for about 20 minutes. Once they are done, you pull them off, open them, and enjoy!
Here are some of our favorite flavor combinations for the packets (also, keep in mind there are no exact measurements, I just sprinkle to my heart’s desire). Cut the potatoes how you like them, then use the following ingredients (and don’t forget to add butter or oil at the top to help with cooking!):
Bacon Ranch
- Dry Ranch Seasoning
Bacon Bits
Parmesan Cheese
Italian Parm
- Dry Italian dressing seasoning (you can get this in the salad dressing aisle)
Parmesan cheese
Loaded Baked Potato
- Bacon Bits
Chives
Sharp cheddar
*Serve with sour cream
Taco-riffic
- Taco Seasoning
Onion
Jalapeno
Green peppers
Cheddar
*Serve with Salsa, sour cream, and black olives
Garlic and herbs
- Minced Garlic
Thyme
Rosemary
Veggie Packet
- Onions
Peppers
Mushrooms
Broccoli and Cheese
- Finely chopped broccoli (lightly toss in olive oil to help with cooking)
Cheddar
Irish Potatoes
- Corned beef
Shredded cabbage
Cheddar Ale
- Cheddar
Small splash of beer
Tex Mex
- Onion
Jalapeno
peppers
Corn
Black Beans
Taco seasoning
Cheddar
*Serve with salsa and sour cream
Creole
- Shrimp
Corn
Old Bay seasoning
Cajun seasoning
And of course, you can always just do plain old potatoes with some salt and pepper! That is also a favorite in our home!
These are really so easy to do and keep it fresh all summer long with the sides. I promise these potato packets will become a family favorite!
