Family Friendly Instant Pot DInner Recipes

As the long summer days begin to wind down and the craziness of back-to-school approaches, you may be on the lookout for some quick, delicious meals. Have you heard of the Instant Pot? If not, check out this post to see what it’s all about! For those of you that do, here are some of our family-friendly favorite recipes:

Chicken, Bacon, and Ranch Pasta

I’m a fan of one-pot dinners like this simple and flavorful chicken, bacon, and ranch pasta. You sauté the chicken, add the other ingredients, set the timer, and come back to a complete dinner! As a twist, we’ve also added broccoli and diced tomatoes.

Spaghetti

A typical family classic known for its ease just got easier! Since you can add everything to the pot, you don’t have to mess with any boiling water or simmering sauce. Another variation on this dish is spaghetti and meatballs!

Chicken and Broccoli Macaroni and Cheese

By taking a classic family favorite and adding a protein and a vegetable, you can turn it into a meal! Plus, who would turn down macaroni and cheese? This is a classic comfort meal done in minutes.

Salsa Chicken for Tacos

Sure, the whole dinner isn’t made in a single pot, but the speed in which you can make this, even from frozen chicken breasts, can’t be beat! While the salsa chicken cooks, prep the tortillas, shells, and any toppings you’d like to serve! I like to make extra to have leftovers for another meal. Chicken burrito bowls, enchiladas, or quesadillas would be perfect for using up leftovers.

Meatloaf

This is quick and easy—minus the fear of having a too-dry meatloaf for dinner. My husband, who isn’t typically a fan of meatloaf, loves this version!

Roast with Veggies

A recipe usually reserved for Sunday dinners when you have more time to prep and cook, this roast is a classic. While yes, it does take a little longer than the other meals listed here, you get a perfectly done roast, and veggies that taste like they were slow roasted all day.

Sweet Corn

This is not a full meal, but it deserves a shoutout. This time of year, sweet corn is in abundance, and the instant pot has become our favorite way to cook it!
