Savory Blueberry Balsamic Glazed Chicken

Enjoy this unique twist on a classic dish, where the sweet and tangy notes of blueberries meld with the savory chicken to create a taste sensation that will delight your taste buds!

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh blueberries
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh basil for garnish

Instructions:

  1. Prepare the Chicken:
    • Season chicken breasts with salt, pepper, and dried thyme on both sides.
    • In a large skillet, heat olive oil over medium-high heat.
  2. Sear the Chicken:
    • Sear the chicken breasts for 5-6 minutes on each side or until golden brown and cooked through.
    • Remove chicken from the skillet and set aside.
  3. Blueberry Balsamic Glaze:
    • In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
    • Add fresh blueberries, balsamic vinegar, and honey to the skillet. Stir well.
  4. Simmer and Glaze:
    • Allow the blueberry mixture to simmer and reduce, mashing the blueberries with a fork to release their juices.
    • Once the sauce thickens slightly, return the seared chicken to the skillet.
  5. Coat and Finish:
    • Spoon the blueberry balsamic glaze over the chicken, ensuring each piece is thoroughly coated.
    • Simmer for an additional 2-3 minutes, allowing the flavors to meld.
  6. Serve:
    • Plate the chicken, drizzle with any remaining glaze, and garnish with fresh basil leaves.
